Key Factors Affecting Shelf Life
1. Bag Thickness
Thicker bags have fewer micro-pinholes in the aluminum layer, reducing oxygen and moisture transmission over time. For long-term storage exceeding 5 years, 5 mil (127 µm) minimum is recommended. For 25+ year storage, 7 mil provides maximum security.
2. Oxygen Absorber Sizing
Oxygen absorbers must be sized correctly for the bag volume. The standard recommendation is 300cc absorbers for 1-gallon bags and 2000cc absorbers for 5-gallon bags. Using undersized absorbers is the most common mistake in long-term food storage.
3. Seal Integrity
A proper heat seal is critical. The seal should be at least 5mm wide with no wrinkles, food particles, or moisture in the seal area. Channel-type heat sealers produce the most reliable seals. Test seal integrity by pressing on the sealed bag — no air should escape.
4. Storage Temperature
Every 10°F increase in storage temperature roughly halves the shelf life of stored food. The ideal storage temperature is 50-70°F (10-21°C). Avoid attics, garages, and any location with temperature fluctuations.
